Ingredients
- 4 oz. uncooked Rotini pasta
- 1/2 pound Lean ground beef
- 1/4 c. Water
- 2 Tbsp Taco seasoning mix
- 1 Green bell pepper, chopped
- 2 Tbsp Salsa
- 2 Tbsp Fat-free sour cream
- 2 Tbsp Reduced-fat cheddar cheese

Cooking Instructions

Prepare the rotini pasta according to the directions on its package.

Brown the ground beef in a skillet over medium heat until no longer pink. Drain off any excess fat & return the beef to the skillet.

Add the water, the taco seasoning and the bell pepper to the beef and simmer until the sauce thickens, stirring occassionally.

While the beef is simmering, combine the salsa and the sour cream in a small bowl.

Divide the pasta into two servings and spoon them onto plates. Top each plate with a portion (half) of the beef mixture. Sprinkle each with half of the cheese and top with half the sour cream/salsa mixture.
